Owner Sam Lee had just welcomed in his first clients when the mandate demanded he shutter his doors.

Today, passing by the quaint restaurant, you’ll know that the grand opening may have been underwhelming, but the average day at Chelsea Fusion is beyond memorable. Even scrolling through the official Chelsea Cusine and Chelsea Fusion Facebook pages you will see this restaurant has become a beloved space in Brentwood, filled with smiling faces, full tummies, and growing friendships. In fact, the people and dishes at Chelsea Fusion are so enticing, after one visit, you’ll find yourself a repeat, loyal customer, hopeful that one day Sam will make a sushi roll in your namesake.

Sam is the smiling face and restauranteur genius behind Chelsea Fusion. Alongside his beautiful wife Insio Che, the small location, long ago known for homemade tortillas, is filled with an incredibly creative, not to mention, delicious and eye-catching beautiful menu of community favorite dishes. He chooses to not participate in the video and images, but keep in mind – everything you taste stems from his culinary skills and imagination.

Sam had a long history in the hospitality industry and notes “My simple dream was to open a neighborhood restaurant, make new friends, create, experiment, live & learn.” And that is exactly what he brings to Brentwood. Upon entering, Sam’s smile will greet you, inviting you to sit down, and is quick to recommend dishes you are sure to love.

At Chelsea Fusion, you and your guests can choose from an extensive menu that leads you through an unforgettable dining experience. You can choose from appetizers, noodles, sushi rolls, sashimi plates, ramen, or even pick-up party trays for hosted events.

If you are unsure what to pick, talk to Sam or any of the staff at Chelsea Fusion. They will ask some questions and then begin to shower you with world-class dishes. Some of our favorites include the papaya salad and the chicken wings. And although you might not normally think about chicken wings and sushi, we PROMISE they will blow your socks off.

The menu truly has something for everyone. The Prosper team was able to meet owner Sam Lee for lunch and what an immersion of the senses we had! Sam brought out a bottle of saki to warm our pallets as we reviewed the menu. A quick tip we learned is that you can never pour your own sake! It’s bad luck! Then we began to luxuriate in the tastes, smells, colors, and textures of phenomenal food.

When it came to our order, we enjoyed every last morsel of every dish we ate! We enjoyed spicy sushi rolls, KETO-friendly sushi rolls, an assortment of freshly sliced sashimi, and almost every flavor combination in between. Not one person left without a new favorite!
